Just go to Epic Games' website, log in, and under the 'Account' section, you can find 'Connections' and disconnect your PSN there.

Head to the Epic Games website, log in, go to 'Account' under 'Connections' you'll see 'Accounts', click 'Disconnect' next to your PSN account.

From experience, all you gotta do is visit the Epic Games website, log in, navigate to 'Account' > 'Connections', then click the 'Disconnect' button next to your PSN account. Easy peasy!
