You can earn up to 50 PokeCoins per day from defending gyms. The formula is simple: 1 coin per 10 minutes your Pokemon is in a gym. So, for max coins, your Pokemon needs to defend a gym for around 8 hours and 20 minutes.

The limit is 50 PokeCoins per day regardless of how many gyms your Pokemon are in. Just make sure to collect them daily!

I've had my Snorlax hold a gym for days but still, the max is 50 coins per day! So, no stacking there!
