As someone who's played through that part, I found that using a combination of Levioso to lift them off the ground and then hitting them with a strong spell while they're airborne pretty effective. It's all about control and hitting hard when they're most vulnerable!

Honestly, just dodge and use basic spells. Everyone overthinks this. The knights aren't that tough once you get the timing down.
