Just chop down some big ol' Elm trees, process the wood into planks, and start laying them across a river or gap. Remember, trolls love wide bridges!

First-hand tip here: make it as rickety as possible! I used thin wood planks and left gaps. Also, add some traps or barriers to really spook people!
