Build the Advanced Warfare Center and use it to retrain soldiers. It takes time, but it's worth it if you need a different class.

You can't directly change a soldier's class in XCOM 2, but you can retrain them at the Advanced Warfare Center after building it!

First-hand exp here: Use the AWC to retrain them, but beware, it can take up to 10 days! Patience is key.

Honestly, it's easier to just recruit new soldiers with the desired class. Retraining takes forever!
