You can change your email on the PS3 by going to 'Account Management' in the XMB menu and selecting 'Account Information.' From there, select 'Sign-in ID (Email Address)' and enter your new email.

I just did this last week! Head to the XMB menu, go to 'PlayStation Network,' then 'Account Management,' and finally 'Account Information.' Enter the new email in 'Sign-in ID,' and you're all good.
