Currently, there's no option to change your horse's name in V Rising. You could always just nickname it in your head!

Unfortunately, V Rising doesn't let you rename horses at the moment. I tried everything, even sweet-talking my horse—no luck.

You can't change a horse's name in V Rising! Sorry to break it to you, but it seems vampires can build grand castles but can't rename a horse.
