To change your email address in Pokemon GO, log into your account on the Pokémon Trainer Club website, Go to 'Profile Overview', and then 'Edit Profile'. Update your email from there!

If you use a Google account to sign in, you can't change the email directly. You'll need to create a new account with the desired email.

I had to do this recently! Just went to the Pokémon Trainer Club website, logged in, and updated my email in the profile section. Super easy.
