Easy peasy! Go to Settings -> Display Settings -> Video Output Settings. Choose HDMI, then select 'Custom,' and tick 1080p. Voilà!

Just unplug everything and plug it back in with everything off. Worked for me.

From the main menu, hit Settings, then Display Settings. Select Video Output Settings, choose HDMI, and set that bad boy to 1080p.
