When you're on the main menu, head to the options and look for the 'Region' or 'Server' settings. Pick your preferred region and save. Easy peasy!

It's a bit hidden, but to change your region in Dragon Ball FighterZ, you have to go to the main menu, select 'Matchmaking Settings,' and then you'll be able to select your region from there.
