You can only change the cover on playlists you've created. So if it's a playlist made by Spotify, sorry, you're outta luck!
Super easy! Just open your Spotify app, go to the playlist you've created, click on the three dots (next to the Follow option), and choose 'Edit Playlist'. Then, click on the current cover image and select 'Choose Photo' to upload your desired one. Boom, new cover!
