Use RCA to 3.5mm adapter and connect to the PS3's AV multi-out port. Easy peasy!

You can connect your wired headphones to the PS3 by plugging them directly into the TV or monitor's headphone jack. If your TV doesn't have a headphone jack, you might need an RCA to 3.5mm adapter.
