You can鈥檛 copy text from Instagram posts directly in-app. A workaround is to open Instagram on your web browser, highlight the text, right-click, and copy!
I usually screenshot the text I need and use Google Lens to extract it. Not perfect, but it works!
Sorry to break it to you, but Instagram doesn't make it easy to copy text directly. Browser method is your friend here.
