Lol, just run in circles till they get dizzy and then BAM! Hit 'em with everything you got. Really though, dodging and quick spells work best. Keep moving and use the environment to your advantage.
Hot take: Knights aren't even that hard. Just learn their patterns and hit them when they're recovering from attacks. Easy peasy.
Honestly, just upgrade your spells as much as you can. Stronger spells = easier knight fights. And use potions! They're not just for decoration in your inventory.
