In V Rising, you can't actually delete a character directly. Instead, you can always just create a new one on a different server or wipe the server you're on if you have admin privileges.

No character delete option in V Rising yet. Just make a new one on another server and forget about the old!

V Rising doesn't offer character deletion. You can always start anew on a different server or reset your existing one if you're the admin.
