On PS4, go to Settings > Application Saved Data Management > Saved Data in System Storage > Delete, then find Xenoverse and delete the save data. Easy peasy!

On Xbox, fire up 'My Games & Apps', find Xenoverse, hit the Menu button, and choose 'Manage Game'. Go to 'Saved Data', select the save you want outta there, and delete!

PC master race here, just navigate to the save game folder (usually in 'C:\Users\[Your Username]\AppData\Local\DBXV2\[Some Numbers]') and delete the files. Bye-bye save data!
