To delete shaders on the Steam Deck, go to Settings > Storage > Shader Cache, then select the game and clear its cache. Easy peasy!

Open Steam Deck's Desktop Mode, navigate to the game's shader cache directory, and delete the folders manually. Careful not to delete anything else!
