To detonate sticky bombs in GTA 5 on the PS3, just throw them with L1, switch to the detonator by pressing R2, and then press Left on the D-pad to blow 'em up!

Just use L1 to throw the sticky bombs and press Left on the D-pad to detonate them. Boom!
