To disable console sharing on your PS5, go to Settings > Users and Accounts > Other > Console Sharing and Offline Play. Then select 'Disable' to turn it off.

Just head to Settings, scroll to Users and Accounts, find Other, and click Console Sharing and Offline Play. Hit Disable and you're done!
