Go to your Steam Library, right-click on XCOM 2, select 'Properties', then 'DLC', and uncheck the boxes for the DLCs you want to disable. Easy peasy!

I disabled the DLC by simply going into the game's menu under 'Options' and selecting which expansions to toggle on or off. Quick and painless!

On consoles, you might need to uninstall the DLC directly from the game management settings. Check your respective console's guidelines for specifics!
