Super simple! Just launch your game, go to the settings menu, then find the server settings. Change the mode from PvP to PvE. Happy vampire survival!

From firsthand experience, you can disable PvP by creating a private server specifically in PvE mode. This way, you don't have to worry about those pesky vampire hunters while you're building your dream castle.
