You can't directly edit your game on Roblox using an iPad. You'll need to use a PC or Mac to access Roblox Studio.

For now, Roblox Studio isn't available on iPads. You'll have to hop onto a computer to make those edits!

I've been using Roblox for ages, and I can confirm that game editing is a job for the PC or Mac. The iPad is great for play, though!
