The easiest way is to try logging into your PSN account on a browser. If you're logged in on your console, head to 'Settings' > 'Account Management' > 'Account Information' to see your email.
Hot take: Just reset your password. You'll get an email at the address you used. Problem solved!
From personal experience, if you have multiple emails, try searching 'PlayStation' in all of them. That's how I found mine buried in spam.
