Just head to the airport, hop into a plane with Triangle, and use R2 to accelerate. Once you gain enough speed, pull back on the left stick to lift off. Easy peasy!

Get in, press R2 to go, and pull back on the stick. You're basically a pilot now!

To fly a plane in GTA 5 on PS3, head to the airport, find a plane, and press Triangle to enter. Use R2 to accelerate, pull back on the left stick to take off, and use L1 and R1 to steer. Happy flying!
