You can use the AV Multi Out cable; connect the red and white audio cables to a 3.5mm adapter, plug that into your headset, and adjust the settings accordingly.

Easiest way: Get a USB headset. Plug it right into the PS3, change the audio output settings to USB, and boom, you're set!
