Short and sweet: You can't individually hide achievements. It's all or nothing under 'Game Details' in Privacy Settings.

Gotcha covered! To hide your achievements on Steam, head over to your profile, click 'Edit Profile' then go to 'Privacy Settings'. From there, you'll see a dropdown menu for 'Game Details', which includes your achievements. Just switch it to 'Private' or 'Friends Only', depending on who you wanna hide them from. Easy peasy!

I experimented with this and found a workaround: make your entire profile private. Not the perfect solution if you want to showcase other aspects of your profile, but it does the trick if you're super concerned about hiding those achievements.
