Just run. Seriously, unless you've got good gear and you're prepared for a long fight, it's better to live and fight another day. Assaultrons are no joke.
I once spent 10 minutes dancing around a wrecked car, blasting away at an Assaultron with a shotgun. Finally got it by constantly moving and taking shots at its legs and head. It’s doable, just needs a bit of strategy and a lot of ammo.
