Go to your Buddy screen, tap the menu, and select 'Swap Buddies'. You'll find the option to remove your buddy there.

From personal experience, you can simply unassign your current buddy by selecting 'Swap Buddies' and then choosing 'Remove Buddy' at the bottom. Easy peasy!

To not have a buddy in Pokemon GO, just set your buddy Pokemon to none in the buddy menu!
