From my experience, just use a USB cable and it should work fine right away, no need to fiddle with Bluetooth settings. Easy peasy!

You can pair a PS5 controller to a PS3! Just plug it in using a USB cable, then go to Accessory Settings > Manage Bluetooth Devices > Register New Device. Disconnect the USB cable and hold the PS button and Share button on the controller until it starts flashing. It should show up on your PS3!
