From my experience, the easiest way is to have internet access on your PS3. Just go to the game, and it'll prompt you for any updates.
To patch PS3 games, you need to connect your PS3 to the internet, go to game settings, and select the option for checking for updates. If there's a patch available, the console will automatically start downloading and installing it.
Honestly, sometimes it's faster to just uninstall and reinstall the game. The patches will come with the new install.
