I usually go with a wired solution. Use RCA-to-3.5mm adapter cables from your PS3's AV output to your headphones. Old school but it works!

You can't do it directly with regular headphones. Need a DAC or an adapter. Check Amazon!

The best way is to use a Bluetooth headset. Pair it with your PS3 under 'Accessory Settings' -> 'Manage Bluetooth Devices.' Sounds like a dream!
