How to play Steam games without updating
Unfortunately, you generally can't play Steam games without updating them first if an update is available. Steam is designed to automatically update games to the latest version before letting you play to ensure all players have the same, most secure, and feature-complete version of the game. However, if you really need to, you can try setting Steam to Offline Mode. This won't always work if the game requires an update to play, but it's worth a shot for single-player games!

Nah, just let it update. The devs put those updates out for a reason. Bug fixes, new content, and whatnot. Playing an outdated version is just asking for trouble.
Actually, just go offline. Steam's offline mode is pretty solid for this. Before your game tries to auto-update, switch Steam to offline mode and it won't try to download any updates. Works fine for me when my internet is acting up and I wanna dodge those hefty updates.
