Just factory reset and update from USB. Simple.
First, grab a USB stick and make sure it's formatted to FAT32. Then download the update file from the official PlayStation website and save it in a folder like this: /PS3/UPDATE/. Plug the USB into your PS3, go to System Update in the Settings menu, select Update via Storage Media, and follow the on-screen instructions!
