In the XMB menu, click on 'PlayStation Network,' then go to 'Account Management,' and select 'Transaction Management.' You'll see 'Billing Information'—delete your card details there.

Who still has a credit card linked to their PS3? Just go to 'Account Management' -> 'Transaction Management' -> 'Billing Information' -> Delete.
