First, switch your Steam Deck to Desktop mode. Then, use the Discover Software Center to find and install Dolphin. Once installed, you can add it to Steam as a non-Steam game if you want easy access from Gaming Mode.

Just from personal experience, go into Desktop Mode, grab Dolphin from the Discover app, and you're good to go. Works like a charm!

Just download Dolphin directly from the Discover app on the Steam Deck. Open the app, search for 'Dolphin Emulator,' and install it. Simple as that!
