You can also abuse the game's autosave feature. By setting up multiple autosave slots in the settings, you can always go back a few steps if things don't go your way. It's a little safer than just relying on manual saves.
Just don't do it. Save scumming ruins the challenge and fun of XCOM 2. Embrace the chaos!
Honestly, what worked for me is saving right before every shot. Miss that 95% hit chance? Reload and do it again. Rinse and repeat until you nail it!
