To see Roblox chat on Xbox, press the View button (two overlapping squares) on your controller. It opens the chat window so you can communicate with other players.

You'll need to enable chat in the settings. Go to the Menu, then Settings, and make sure 'Chat' is turned on. Boom, you're good to go!

Honestly, the easiest way is to use the Xbox app on your phone or another device. You can see and respond to chats there while you play.
