To sign out of Apex on PS5, just go to the main menu, select 'Settings,' then 'Account,' and finally 'Log Out.' Easy peasy!

You can also sign out by simply closing the game and then switching your PSN account. Works like a charm for me every time!

From my experience, you just need to navigate to the settings in Apex, find the account options, and select 'Log Out.' It's pretty straightforward!
