Hold down the PS button on the controller you want to switch until the menu pops up, then go to 'Controller Settings' and select 'Reassign the Controller.' Choose the number you want it to be, and you're set!

Switching controllers on PS3 is as simple as holding the PS button, going into 'Controller Settings,' and selecting 'Reassign,' from there pick the new controller number. Done and done.
