Use a FAT32 formatted external hard drive. Plug it into your PS3, then navigate to Game Data Utility, choose the game, press triangle, and hit 'Copy'.

First, format your external hard drive to FAT32 since the PS3 can't read NTFS. Then, connect it to your PS3, go to Game > Game Data Utility, find the game, press triangle, and select 'Copy'.

You can't actually transfer PS3 games directly to an external hard drive. You can only backup saved data and game installs.
