Just make sure your external drive is FAT32, plug it in, go to Game Data Utility, find the game, triangle button, and 'Copy'.
First, format your external hard drive to FAT32 since the PS3 can't read NTFS. Then, connect it to your PS3, go to Game > Game Data Utility, find the game, press triangle, and select 'Copy'.
You can't actually transfer PS3 games directly to an external hard drive. You can only backup saved data and game installs.
