Turning off automatic updates on Steam is pretty straightforward. Just open the Steam client and go to your library. Right-click the game you want to stop auto-updating, select 'Properties,' then head over to the 'Updates' tab. You'll see an option to change automatic updates to 'Only update this game when I launch it.' Just select that, and you're good to go! This way, the game will only update when you decide to play it.

Short version: Library > Right-click game > Properties > Updates tab > Set to 'Only update this game when I launch it.' Done!

Honestly, I don't get why you'd want to turn off automatic updates. They keep your games patched and bug-free. But hey, if you need to save on bandwidth or prefer updating games on your own schedule, the option's there.
