To turn off echo on your PS5, go to Settings > Sound > Audio Output and make sure 3D audio is off. Also, check your headset settings and lower the mic sensitivity.

Had the same issue! I fixed it by using a different headset. Some headsets just don't play nice with the PS5.

Try reducing the volume of your TV or speakers. Sometimes, the mic picks up the game audio from them.
