To turn off the Steam Keyboard, just go into Steam's settings. Click on 'In-Game' and you'll see an option for the Steam Overlay. Inside there, you can tweak or turn off the Big Picture Mode's keyboard settings. It's a bit hidden but once you find it, you're golden!

Honestly, I just disabled the Steam Overlay completely. Got tired of it popping up during games. Easy fix and you won't see that keyboard again.

Just unplug it, LOL! But for real, if you're talking about the on-screen keyboard, it's all in the settings under the 'In-Game' section.
