Just tap the AR toggle in the top right corner when you're catching a Pokémon. Make sure your camera permissions are enabled!

To turn on the camera in Pokemon GO, go to the settings and enable AR mode. Then you'll have to grant camera permissions for the app if you haven't already!

In the settings, enable AR+. You also need to allow the app to use your camera in your phone's settings.

I had the same problem! You need to go to Settings > Privacy > Camera on your phone and make sure Pokemon GO has permission. Then, you can toggle AR mode during a catch.
