From personal experience, log into your Epic Games account on a PC or mobile browser, find 'Connected Accounts' in account settings, and click 'Disconnect' next to your PSN. A confirmation pop-up will appear – just confirm, and you're good to go!

Actually, unlinking directly from the console is impossible. Use a browser to access your Epic Games account settings.
