Sign in to your PSN account on the PlayStation website, go to 'Security' under 'Account Management', and click 'Sign Out of All Devices'. This will effectively unlink your PSN from any connected services.

Head over to your PlayStation account settings, click on 'Account Management', and then choose 'Linked Services'. From there, you can unlink your PSN account by selecting the service you want to disconnect.

I recently unlinked my PSN to switch to a new email. Go to 'Account Settings' on your console, then 'Linked Accounts', and you'll see an option to unlink.
