Download the update file from the PlayStation website, save it to a USB drive (folder structure should be PS3/UPDATE), and then plug it into your PS3. Go to Settings > System Update > Update via Storage Media.

You can update your PS3 manually by downloading the firmware from Sony's PlayStation website onto a USB drive. Create a folder named 'PS3', then a subfolder 'UPDATE', and place the file in there. Plug it into your PS3 and select System Update from the settings menu.
