Download the update file from the PlayStation website, save it to a USB drive (folder structure should be PS3/UPDATE), and then plug it into your PS3. Go to Settings > System Update > Update via Storage Media.
Just download the update from Sony's site, stick it on a USB, and choose System Update from the PS3 settings.
