Download the update file from the official PlayStation website into the 'UPDATE' folder. I've done this a bunch of times. Make sure your USB is formatted to FAT32, and place the downloaded update file into 'PS3/UPDATE' folder structure. Plug it into your PS3, navigate to System Update, and select Update via Storage Media. Smooth sailing!
