From my time working at an Indian restaurant, I can tell you they prep huge batches of base sauces (like tomato and onion gravies) and marinate meats in yogurt and spices. You'll also see them soaking lentils and rice ahead of time too.

Indian restaurants 100% use a lot of spices! Cumin, coriander, turmeric, garam masala, you name it. They also rely heavily on fresh ingredients like tomatoes, onions, and garlic. Plus, ghee (clarified butter) and fresh herbs are a must!
