Honestly, it's all about the stringfish for me. Those things are a nightmare to catch because they're only available in rivers on clifftops from December to March. Plus, they only show up between 4 PM and 9 AM. Good luck, you'll need it.

I'd say the Coelacanth but don't forget about the Golden Trout! It's also super rare and only appears in clifftop rivers during certain months. Catching either feels like a major win.
